I always generally cut one muffin in half for the two kids because sometimes they are just wasteful and if they want more, I will cut another! Today, I cut the muffin in half, expecting for it to be devoured because it was a double chocolate chip muffin right? WRONG. SO. WRONG!! Sometimes my kids can be so good, sweet and cute then other times they are just little satanic demons.

I figured since we were all sitting at the kitchen table things would be smooth sailing and they just proved me wrong the moment I sat down at my laptop (thinking of what to make my blog post about).

It started with both their cups of milk, E’s cup has a lid but that doesn’t stop her from making a mess. L seems to be doing fine, chugging along like Thomas the Train with his milk and you assume he finished it.. WRONG AGAIN MOM! “The muffin tried a jump over my milk, mom” was the response I received after asking why there was milk everywhere and no cup to be seen (again, I am sitting right in front of them MIND BLOWN because I can literally see everything that is happening).

I get off of my chair to bend over and pick up the cup that was involved in the muffin pole-vaulting contest, when I return…

There is literally micro-muffin pieces EVERYWHERE! I honestly didn’t think that muffins could be powdered after they were already cooked. Luckily enough, E didn’t rub the muffin all throughout her blonde hair… Today anyways.

In the fifteen seconds I took my eyes off of the table, there was a muffin explosion and it was probably the worst I have seen from my two mess makers. There is no photo evidence because between the dog and me running to get the vacuum, the mess didn’t last very long. I was also a little bit angry about the scale of mess that had been made, L stops and dead ass stares in me in face and says, “Clean up the floor right now!” for real.

I pondered what it would be like with one child for a second after giving one to the circus but, I realized.. I worked to damn hard for him and he is just like his mother so I cannot get mad.

Moral of this story, just save the last muffin for yourself.

Sweet Potato Smash-browns!

So, I did not make the chicken wings! Why? Because apparently you should take them out to thaw before you attempt to cook them. We have already cooked just needs to be warmed chicken and that is what I cooked. My kid is on this warpath of KD and that is what they ended up having last night but, not me!

I attempted sweet potato hash-browns! 

What you will need:

  • 1/2 of a Regular Sweet Potato (I put about half of the shredded potato in a container, away for another time)
  • 1 – 1 1/2 TSPs of Unsweetened Apple Sauce (as a binder)
  • Extra Virgin Olive Oil (to coat the frying pan)
  • Dash of Sea Salt
  • Dash of Chili Flakes

I like to peel any variety of root vegetable with a carrot peeler because if I don’t, I end up with half the amount of veg that I started with.

While shredding your sweet potato with your cheese shredder, turn on your pan medium-low/medium heat and let the oil heat up.

After you have your SP shredded, put it in a bowl then add your apple sauce, sea salt and chili flakes.

Mix that all together in your bowl and shape into “hash-brown” shape/size then place into your warmed frying pan.

I started with a pan that was too hot.. The KEY to these is, lower heat – longer time. 

As I was mixing the KD for everyone else, I mildly forgot about my hash-browns hense the name “smash-browns”. Before I had realized my pan was too hot, my SP had got a little more crispy then I had intended. All in all, lesson learned!

So, I mixed together both of my hash-browns then topped with mild salsa and BOY WAS IT GOOD! Even if it was a little crispier then I wanted.

Saturdays.

Saturdays.

I love Saturdays.

Usually our Saturdays are filled with comfy clothes, comfort food and relaxation. Most of the time after the kids are gone to bed, we get some snacks and watch the hockey game. If that is not an option we will watch a movie and of course eat some snacks, snacks are just always a must. Most times I do not check my phone that often because it gets left in my room or on the kitchen counter.

Sometimes we bake, go for drives or breakfast. I absolutely love going for breakfast on Saturdays (its on my top ten 5 things I love the most) .


This Saturday.

The night before I had made steak strips in my Instant Pot and, potato wedges in the oven (my play on steak and fries). Apparently L loves potato wedges. He power ate all of his wedges and then continued to shovel the beef right after.

Fast forward 6 hours into his peaceful slumber, he wakes to pee and that was a short trip out of bed and back. A little while later there was vomit and vomit and MORE vomit, needless to say, it was a long sleepless night (thankfully E sleep through the night which is a rare occurrence.

 3 WEEKS LATER…

After I started this post, three weeks ago, the plague broke into my house and just destroyed the place.

Let me just be super fuckin’ real right now. Motherhood GETS you, sucks you in and consumes you. In those times in your journey through motherhood (because lets be honest that is what this is, a journey) you just do not have the urge to do anything extra then the mandatory things you are obligated to do like, keep your children alive.

L’s overnight throw up was just the tip of the roaster coaster to an almost 2 week snotty, cough-y, chicken noodle, tissue and high temp filled excellent time. We wiped this house out of toilet paper, can you FEEL my pain? Sure I recovered but, my house needed some serious TLC after this mom was smothered with the flu dealing with two snotty toddlers (you can imagine).

When these things happen in my life, I just loose all motivation for all things extra…

Extra things being:

  • Working out
  • Eating on my A game
  • Showering because like once the kids were in bed, I needed to sleep myself! (naps before bed to get things done, naps when the kids were napping) SlEeP dEpRiVaTiOn . CoM
  • Drinking all my water
  • General self care just goes down the toilet with my tissues

Yesterday, I started a new program and I think it is exactly what I needed! I feel amazing, more energy, generally just happier because everything is coming back to normal as normal can be in our mess.

Side note.. 

I was feeling like I had totally failed as a blogger but everyone starts somewhere. It actually took a message from a dear friend to get me back on here.

“Sorry, I haven’t read your blog lately. I’ve been so busy with school and work….”

“It’s because you haven’t got a notification because I haven’t published anything in that long”

“WHY? You just started! …It’s your time. Do it.”

This made me so warm and grateful to have the supporters in my life that I do. And most times, it just takes that one thing to get you back in your big girl panties and get shit started.. or continued! This journey is one of the best I could have ever chose for myself and if I went back in time, I would do everything the same way just so I would have the family I have been blessed with. I could not be more excited to continue on this path and just make myself more accountable! There might be some chicken wings on the menu tomorrow, stay tuned and stay positive!

Caramel, Strawberry, Banana “Nice” Cream.

There was too much caramel but, I will advise you otherwise.

I had made a post on FB asking my fellow family and friends to suggest their best banana bread recipes (I had a few extra frozen bananas kicking around). This is when I received a message from a dear friend, suggesting that I make banana “nice” cream! I have always heard of it and people making it but, I had never tried it myself.. Surprise! I did it and my kids LOVED it!

I am going to put the ingredients list first because, if anyone here is like 75% of the people on the internet then that is what you are here for! I find that if I am looking for something specific, I am scrolling on a mission and finding the things I need fast!

What You’ll Need!

  • 2 Frozen Bananas
  • 1, 1/2 Cups of Frozen Strawberries
  • 2 -3 TBSPs of Cream (now that is what I used THIS time, next time I will have a dairy-free creamer that will serve the same purpose)
  • 4 – 5 Drops of Any Extract You Chose (NOW, pay attention, only use 2-3 drops if any at all! It was too caramel-y)

The Process.

I used my Nutribullet for this not a traditional blender. Use the bigger cup for this recipe or make a half recipe if your blender is smaller.

I chopped my bananas BEFORE I peeled them and in my mind it was a lot easier because, the peels literally slipped right off with a bit of pressure.

Do you see the minion face on that banana? Elf on the Shelf Day 9 or 10.

Add the bananas to your nutribullet then, measure 1, 1/2 cups of strawberries and add to your bananas. This is when the extract and cream of any variety come into play. Make sure to add just before blending, pulse at first until you get some of the strawberries blended.. Blend for 4 – 5 minutes for desired consistency.

If you plan on serving right after you are done blending then you will have a smoother texture. You may freeze as long as you like even freeze it for a couple days and thaw when you’re ready to enjoy again!

Mornings. You Should Have Thought About Those Before Having Kids.

The perfect morning?

I would describe the perfect morning as, mid-July with the sun shining and a slight chill in the air from the night before. (Not chilly enough for dew though.) But, just enough chill that you would see the steam of your fresh, french pressed coffee sitting next to you. Hearing the morning birds, fresh warm breeze and embracing the new beginning the morning brings. I have always enjoyed mornings such as the one described in this paragraph but, that simplicity is now gone..

Now, my mornings consist of loud wailing and shouts of “MOMMY!” from underneath the door. Racing to the living room just to see whose favorite TV show will get put on first and trying to decide who wants what for breakfast. Nine chances out of ten, I make what they want and they still don’t want it.

If any of you reading are like myself then, you will probably understand when I say “I just want one.. quiet.. morning”. But, we all know this is what we “signed up” for or so they tell us anyways!

I’m starting to learn that, you need to get up before your children! Sleep trumps all, if you are powered with enough sleep you will concur the world. I was never a morning person and really, I’m still not one but those tiny little humans try to make them better! Back to the getting up before them part, it really helps! You are able to have your coffee, open your eyes and actually be awake before the minions wreak havoc on your day. And, I know you’re thinking “but, if I am waking up early I will have to go to bed early.. Night time is our time!”

You will start to enjoy the simplicity and quiet the morning used to bring once again. You will be surprised how much you will actually get accomplished by introducing this process into your life. Even if you are not a parent, make it a goal for yourself to wake up at least 1 hour before you usually do. You will then start to find that, you have time for that 1/2 hour workout you’re just too tired for at the end of the night (plus you will have more energy for the rest of your day). Or, you will have time to read that book everyone has been telling you you just HAVE to read.

Personal development and self-care are two major roles that play in our happiness and health. If you do not take the time for yourself, how are you going to have the time for anyone/thing else?

At first, I was under the assumption mornings were going to be dreadful for the next 18 years but in-reality I just needed to find a new way to enjoy them.

I do not really know where to start, do you start with the past? – Do you just jump right into, today? IF, you did start with the past, exactly how far would you go back?

I have decided, there will be no set timeline to the posts that exist on this website. Just, burst of memories, present adventures and future endeavors. Let’s start with yesterday, January 8, 2019.

The night before, my mother brought me an old laptop, that has seen a lot of years, to say the least. It was running super slow, I couldn’t even run an internet browser. I had a strong connection to the Wi-Fi, when I ran the update test and the computer told me it was up to date, I just thought the computer was a doozie. (There was NO way I was getting anything accomplished in the condition it had been in.) So, later that evening I was going to visit a friend, her husband is SUPER crafty with technology in general so, I brought my laptop along for the ride.

The MOMENT, her husband went through the exact same steps, that I had, for the update test – he discovered 167 UPDATES! Needless to say, my 1 hour trip to a friends house, ended up being 3 hours, 2 hot beverages and it still finished updating when I got home.. I had a great time, so it worked out in my favor in the end!

The reason I needed the laptop brought to me in the first place, is because I wanted to start, this! My blog, my journey, or my contribution lol.. Any way you want to look at it, this is what I needed. I always believe, all things happen for a reason (cliche, I know) but, it is very true! My mother found that laptop, the mouse I needed and brought it to me. Then, I trusted my friend could do the job I needed him to do and, I now have my wonderfully working laptop.

I am a stay at home mom, of two wonderful (most of the time) children, L is 2.5 years and E is just over 1 year old. I was always working or in school before I had children, meaning, I kept busy quite well. But NOW, I have become so wrapped up in being a “Mom”, I have no time for myself (or ourselves, my hubby is in school, out of town Monday-Friday) that I had to find some that was me, something that I loved. I do have a health/wellness network marketing business but, I wanted something more personable. As you can probably tell already, I love to talk. In return, that is why I decided to document some of what goes on in my life and, maybe just maybe, I will reach out to people, who feel the way that I do!

With that being said, I tried and tried SO hard yesterday to get this page up and running, but you know, if you have/had small children.. They make life a crazy, messy adventure! Yesterday was one of those days, that I had to take a nap before I went to bed, do you hear me? You read that right. A NAP BEFORE BED. This night was better, we had a good supper, good bedtime(ish), and mom actually got some adult time before having to crash for the night. AND I accomplished this, hopefully my first post of many to come.

I might be making something with bananas tomorrow, stay tuned!
